Birria Beef Nachos on the Griddle
Ingredients
- For the Birria Beef
- 2.5 lbs boneless beef chuck roast cut into 3-inch chunks
- 1 EZ Bombs Birria Bomb
- 2.5 cups water or beef broth
- For the Nacho Assembly:
- 1 large bag restaurant-style tortilla chips
- 8 oz Oaxaca or Chihuahua cheese freshly shredded (substitute Monterey Jack)
- 1/2 cup finely diced raw white onion
- 1/2 cup fresh cilantro finely chopped
- 2 jalapeños sliced into thin coins
- 1/4 cup Mexican crema or sour cream thinned with a splash of lime juice
- 2 fresh limes cut into wedges
Instructions
Slow Cook the Birria Beef
- Place the 3-inch chunks of beef chuck roast directly into the bottom of your slow cooker.
- In a measuring cup, completely dissolve 1 EZ Bombs Birria Bomb into 2.5 cups of warm beef broth. Pour the mixture directly over the beef.
- Cover and cook on LOW for 7 to 8 hours (or HIGH for 4 to 5 hours) until the beef is melt-in-your-mouth tender and pulls apart easily with a fork.
- Shred and Separate
- Carefully remove the tender beef chunks from the slow cooker and transfer them to a cutting board. Shred the meat completely using two forks, discarding any large pieces of excess fat.
- Ladle the rich, dark red broth left in the pot through a fine-mesh strainer into a bowl. This is your dipping consommé.
- Toss the shredded beef with 3 to 4 tablespoons of the warm consommé to keep the meat incredibly juicy, reserving the rest of the broth for serving.
- Build on the Griddle
- Fire up your flat-top griddle to medium heat (around 350°F).
- Lay down a generous, single layer of sturdy tortilla chips directly on the cooking surface.
- Immediately scatter half of your shredded cheese over the chips to create a protective barrier. Top with half of the shredded birria beef.
- Build a second layer right on top: add more chips, the remaining cheese, and the rest of the savory birria beef.
- The Melt
- Place a large aluminum dome or disposable foil pan directly over the entire nacho platter.
- Squirt a small splash of water onto the griddle surface right next to the edge of the dome to create instant steam, then trap it quickly. Let it steam for 2 to 3 minutes until the cheese is completely melted and bubbling.
- Garnish and Serve
- Carefully remove the dome and slide the entire nacho platter onto a large serving board or tray.
- Immediately crown the hot nachos with the diced white onion, fresh cilantro, and jalapeño slices. Zig-zag the Mexican crema across the top.
