It’s back-to-school season, and let me tell you— after an entire summer of lazy days and mid-morning breakfasts, there’s one thing I’m dreading is a 6:45 a.m. scramble for food. Solution: these freezer breakfast burritos. I batch them up on my Blackstone griddle so I can pull one out, heat it up, and serve a hot, delicious breakfast with no fuss.

These are a family favorite and an absolute sanity-saver. The combo of crispy hash browns, fluffy eggs, smoky bacon, gooey cheese, and just the right amount of green chile all wrapped in a warm flour tortilla? It’s everything good about breakfast in one tidy, freezer-friendly package.

Ingredients

  • 8 –10 large flour tortillas burrito size
  • 8 eggs scrambled
  • 1 16 oz bag frozen hash browns
  • 12 slices cooked bacon chopped
  • 1 –2 cups shredded cheese cheddar, pepper jack, or your favorite
  • 1/2 cup green chile I used homemade but store bought works great too
  • Salt & pepper to taste
  • Optional: foil or parchment + freezer bags for storage

Instructions

  • Preheat your Blackstone and lightly oil the surface.
  • Cook frozen hash browns until golden and crispy. Set aside.
  • Cook bacon until crisp, then chop.
  • Scramble eggs on the griddle. Season with salt and pepper.
  • Warm tortillas on the griddle just until soft and pliable.
  • Assemble burritos: hash browns, eggs, bacon, green chile, cheese.
  • Roll tightly. Let them cool completely.
  • Wrap in foil or parchment, place in a zip-top bag, and freeze flat.
  • 🔄 To Reheat
  • Microwave: Remove foil, wrap in a paper towel, and heat for 1–2 minutes.
  • Air fryer or oven: Reheat at 350°F for 10–15 minutes for a crispier exterior.
