Ingredients
Chicken:

- 1 tsp grated ginger optional
Spicy Slaw:
- 1/2 cucumber thinly sliced or julienned
- 1/4 cup pickled red onions
- 1/2 cup kimchi
- 2 tbsp rice vinegar
- 1/2 tsp honey
- Pinch of salt
For the Bowl:
- 2 cups leftover rice any kind
- 2 –3 eggs fried or soft-boiled
- Oil for cooking
Optional Garnish:
- Sesame seeds
- Green onion chopped
- Chili flakes or toasted nori strips
Instructions
Make the Chicken:
- In a skillet or on your Blackstone, brown the ground chicken in oil. Add garlic and ginger. Stir in gochujang, soy sauce, honey, and sesame oil. Cook until browned.
Crisp the Rice:
