Fresh Meals from One Griddle Cook
We’ve all been there: It’s 5:30, everyone’s starving, and your only options are frozen meat or takeout. got is a half-thawed chicken breast and a bag of sadness in the freezer.
To be honest, meal prep isn’t my favorite. I think it’s because it was always repetitive or tasted like soggy leftovers— because it had.
But that changed when I realized I could griddle up a fresh protein and make it stretch across the week—with meals that felt like I just cooked them.
Welcome to Meal Prep Monday—where we prep like we cook: fresh, flavorful, and fast.

The Strategy: One Protein, Four Fresh Meals
For this week’s meal prep, I used chicken breasts but thighs are also very versatile, budget-friendly, and full of flavor.
I kept the seasoning neutral during the initial cook (salt, pepper, garlic), then split it into four sections, seasoned ’em up and created totally different meals that each feel unique. No casserole pans, no soggy pasta. I cook it all at once on my Blackstone griddle, then divide and conquer.
What’s on the Menu:
- Street-Style Chicken Tacos
- Buffalo Chicken Lettuce Wraps
- Teriyaki Chicken Stir Fry
- Cajun Chicken & Rice
🥗 The Meals
🌮 1. Chicken Street Tacos
Add Blackstone Tequila Lime seasoning or your favorite taco blend. Serve with soft tortillas + diced chicken + onion, cilantro, and lime.
💡 Add crema or avocado for a creamy twist.
🥬 2. Buffalo Chicken Lettuce Wraps
Toss in buffalo sauce + Blackstone’s Parmesan Ranch seasoning. Serve in a tortilla or crisp romaine lettuce with celery, carrots and blue cheese or ranch drizzle.
🔥 Spicy, crunchy, and low carb.
🥢 3. Teriyaki Chicken Stir Fry
Add teriyaki glaze (I used Bachan’s Japanese BBQ Sauce). Toss diced chicken with frozen stir-fry veggies and serve with rice.
💡 Reheat in a pan or air fryer for that crispy edge.
🥙 4. Cajun Chicken and Rice
Season chicken with cajun seasoning. Add Peppers and onions.
✨ Add Andouille Sausage to kick it up a notch.
