Ingredients

For the Beef

  • 4 beef patties I used Teton Waters Ranch beef
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne adjust to taste
  • 1 teaspoon brown sugar
  • 4 tablespoons neutral oil avocado, vegetable, or canola
  • Salt and black pepper to taste
  • For Serving

For Serving

  • Flour or corn tortillas
  • Dill pickle chips
  • Shredded lettuce or slaw
  • Comeback Sauce
  • Lime wedges

Instructions

Make the Nashville oil:

  • Warm the oil in a small skillet or metal cup on the Blackstone. Stir in paprika, garlic, cayenne, and brown sugar. Set aside.

Cook the beef:

  • Place the beef patties on the hot griddle and smash them thin. Season lightly with salt and pepper. Cook until the bottom develops crispy, browned edges.
  • Flip and coat each side with your Nashville oil. Let it caramelize just a bit.
  • Using a spatula or scraper, chop the patties into bite-sized pieces right on the griddle. Toss lightly to coat in any remaining hot oil. Add extra hot oil if you like it spicy.

Build the tacos:

  • Warm tortillas. Add the beef → pickles → slaw/lettuce → drizzle with sauce→ squeeze of lime.
