Plum, Ricotta & Pistachio Flatbread with Hot Honey
Ingredients
- 1 store-bought flatbread or pizza dough about 10–12”
- 3 –4 ripe plums thinly sliced
- 1 cup whole milk ricotta cheese
- Zest of 1 lemon
- 1 caramelized onions thinly sliced cooked until soft
- ½ cup shelled pistachios roughly chopped
- Olive oil
- Salt & black pepper (I used Smoked Salt found through this link)
- Hot honey for drizzling
- Fresh thyme or arugula (optional garnish
Instructions
- Preheat your pizza oven for one hour, bringing it between 500-600 degrees. If using pizza dough, roll it out into a rough oval or rectangle and place it on a pizza peel sprinkled with semolina flour.
Mix your ricotta: In a small bowl, stir together ricotta, lemon zest, a pinch of salt, and a crack of black pepper.
Build the flatbread:
- Brush the dough or flatbread lightly with olive oil.
- Spread the ricotta mixture evenly over the base.
- Arrange plum slices and red onion (if using) on top.
- Sprinkle with half the pistachios now (they’ll toast up nicely).
- Bake for 12–15 minutes, or until the crust is golden and the plums look softened and slightly caramelized.
Finish strong:
- Drizzle hot honey generously over the top.
- Sprinkle the remaining pistachios.
- Add fresh thyme or a handful of arugula if you’re feeling extra.
- Slice it up and serve warm. Bonus points if there’s a glass of chilled rosé nearby
