Sunset Chicken Peppers & Rice

This dish checks all the boxes: protein-packed, full of flavor, super simple and no fuss. This Sunset Chicken, Peppers & Rice recipe is one of those meals that feels fresh and is a perfect meal whether you’re feeding the family or stacking containers for the week.

Sunset Chicken Peppers and Rice
Ingredients
Marinade:
- 1 cup fresh lime juice about 4 limes
- 2 tablespoons hot sauce
- 3 garlic cloves minced, or 1½ teaspoons bottled minced 6 garlic
- 1 lb skinned boned chicken breast halves, cut into cubes or small chunks
- 2 cups cooked basmati or jasmine rice
Spice mix:
- 2 T. chili powder
- 1 teaspoon ground cumin
- teaspoon salt
- ½ teaspoon black pepper
Veggie mix:
- large onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- Avocado oil or your oil of choice
- 2 tablespoons chopped cashews
Instructions
- Marinate chicken 4-6 hours or over night.
- Heat griddle or skillet to med-high heat, add oil. Brown chicken, adding spice mix one it is cooked through.
- In a separate zone or skillet, over medium heat, fry rice in oil and or/butter.
- Saute veggies until they reach your desired doneness. I like to leave them a little crisp.
- You can add seasoning to rice as well.
- Combine rice and peppers mixture. Serve chicken over rice.
- Optional garnish: cashews
