Copycat Torchy’s Brushfire Tacos on the Blackstone Griddle
If you’ve ever bitten into a Torchy’s Brushfire Taco, you know it’s not your average taco—it’s a full-on flavor explosion. Spicy jerk chicken, sweet mangos, and grilled jalapeños hit all the right notes. Of course, I had to try making a copycat version right here at home on the Blackstone—and honestly, I might love this one more than the original.
Cooking on the Blackstone gives that chicken a beautiful sear and keeps it super juicy. I used boneless, skinless chicken breasts but thighs are a great choice too because they hold up to high heat and soak up the jerk marinade. The heat level is totally adjustable—go bold with more jerk seasoning and jalapeños, or tone it down for a more family-friendly version. And the mangos, crema, and fresh cilantro—it balances the spice beautifully and takes all of 5 minutes to throw together.

Torchy’s Copycat Brushfire Tacos
Ingredients
Chicken:
- 1 lb Boneless, skinless chicken breasts diced
- 2 T. Walkerswood Jerk Seasoning
- 2 jalapeños, sliced (seeded if you like less heat)
- 2 T. Soy sauce
- 1 t garlic powder
For the Tacos:
- 6 Flour tortillas I use the "street taco" size
- 1 Mango, diced Can substitute frozen Mango
- Crema
- Cilantro
- Copycat Diablo sauce
Instructions
- Marinate the chicken in the jerk seasoning (overnight is best
- In a small bowl, combine soy sauce and garlic powder. Add jalapeños.
- Heat your Blackstone to med-high heat and put down some avocado oil.
- Cook the chicken and jalapeños separate until chicken is done and jalapeños are soft. Combine and remove from the griddle
- Heat your tortillas on both sides, top with jalapeño mixture. Remove from the griddle and top with mango, crema, cilantro and diablo sauce,

💡Pro Tips:
Use pineapple instead of mango for a twist.
Add extra jalapeños if you like it HOT.
Use chipotle mayo or instead of Diablo sauce.
