Citrus Chicken Kabobs w/Lemon Rice

Ingredients

Kabobs:

  • 1.5 lbs boneless skinless chicken thighs or breasts, cut into 1.5-inch cubes
  • 1 large lemon juice + zest
  • 1 small orange juice + zest
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp honey for a slight glaze

Rice:

  • 1 cup basmati rice
  • 2 cups chicken or vegetable broth
  • 1 tbsp olive oil or butter
  • ½ tsp turmeric for color
  • 1 garlic clove minced
  • ½ tsp salt adjust to taste
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill or mint chopped (optional)

Instructions

  • Marinate chicken at least 1 hour (overnight for best results) Grill on the Blackstone!
  • Sauté garlic in olive oil or butter over medium heat until fragrant (about 30 seconds).
  • Add rice and turmeric. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork, then stir in lemon zest, lemon juice, and fresh herbs.
