Butter Cake w/vanilla ice cream and raspberries

Butter Cake

Ingredients

  • 1 C. butter
  • 2 C. sugar
  • 1 t. vanilla
  • 1 t. rum
  • 4 eggs
  • 3 C. flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1 1/4 t. salt
  • 1 C. buttermilk

Butter Sauce:

  • 1/2 C sugar
  • 1/4 C. butter
  • 1 T. vanilla extract
  • 1/2 C. buttermilk

Instructions

Cake:

  • Cream butter, sugar, vanilla, rum. Add eggs one at a time. Add dry ingredients. Add buttermilk. Bake @350 in greased mini cake pans for 25-30 min. When cakes are done, poke holes with wooden skewer or toothpick.
  • Sauce:
  • While cakes bake, heat sauce ingredients over med until combined and beginning to boil. Remove from heat and pour over cakes.
  • 1/4 t. baking soda
  • Serve with vanilla bean ice cream and berries.
