Butter Cake w/vanilla ice cream and raspberries
Butter Cake
Ingredients
- 1 C. butter
- 2 C. sugar
- 1 t. vanilla
- 1 t. rum
- 4 eggs
- 3 C. flour
- 1 t. baking powder
- 1/2 t. baking soda
- 1 1/4 t. salt
- 1 C. buttermilk
Butter Sauce:
- 1/2 C sugar
- 1/4 C. butter
- 1 T. vanilla extract
- 1/2 C. buttermilk
Instructions
Cake:
- Cream butter, sugar, vanilla, rum. Add eggs one at a time. Add dry ingredients. Add buttermilk. Bake @350 in greased mini cake pans for 25-30 min. When cakes are done, poke holes with wooden skewer or toothpick.
- Sauce:
- While cakes bake, heat sauce ingredients over med until combined and beginning to boil. Remove from heat and pour over cakes.
- 1/4 t. baking soda
- Serve with vanilla bean ice cream and berries.
