Tomato Soup
Ingredients

- 6-8 heirloom tomatoes quartered 1 small sweet onion, quartered
- 3-4 garlic cloves 3 T. olive oil 2 T. Fresh thyme
- Salt & Pepper 1 C. whole milk half and half, or heavy cream plus more to thin handful fresh, chopped basil parmesan, for serving (optional)
Instructions
- Preheat over to 425. Combine tomatoes, onions, garlic, oil and seasonings in dutch oven. Roast 20-30 min until tomatoes begin to char. Transfer to a blender and once cooled a bit, blend to a smooth puree. Return to put, add milk, cream, or half and half until it reaches your desired consistency. Add basil and parmesan to serve.
