Citrus Chicken Kabobs w/Lemon Rice
Ingredients
Kabobs:
- 1.5 lbs boneless skinless chicken thighs or breasts, cut into 1.5-inch cubes
- 1 large lemon juice + zest
- 1 small orange juice + zest
- 3 tbsp olive oil
- 3 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp ground coriander
- ½ tsp smoked paprika
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp honey for a slight glaze
Rice:
- 1 cup basmati rice
- 2 cups chicken or vegetable broth
- 1 tbsp olive oil or butter
- ½ tsp turmeric for color
- 1 garlic clove minced
- ½ tsp salt adjust to taste
- Zest of 1 lemon
- Juice of ½ lemon
- 2 tbsp fresh parsley chopped
- 1 tbsp fresh dill or mint chopped (optional)
Instructions
- Marinate chicken at least 1 hour (overnight for best results) Grill on the Blackstone!
- Sauté garlic in olive oil or butter over medium heat until fragrant (about 30 seconds).
- Add rice and turmeric. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork, then stir in lemon zest, lemon juice, and fresh herbs.
